1. Unwrap your cauliflower right away and transfer to a breathable bag with a paper towel to absorb moisture.
2. If you can’t eat all of your raw florets within the next day or so, blanch the cauliflower for 3 minutes and freeze for later use.
3. Save the greens! Remove the woody sections of cauliflower leaves and roast the rest with olive oil and seasoning for 15 minutes at 400 degrees.

Purple: to prevent the anthocyanin compounds from leaching, sautéing is best.
Orange: the carotenoids that give it a sunny glow, will stay in tact no matter how you cook it.
