1. Eggplants don’t love low temps — storing them in the fridge can cause off flavors, browning of flesh and pitting in the pulp.
2. Eggplants are very sensitive. To keep them lasting longer, store away from ethylene gas emitting fruits and veggies, like bananas, tomatoes and melons.
3. Mature eggplants can taste bitter, but that doesn’t mean they’re bad, try adding a little salt to help balance the flavor.
Eggplant’s spongy texture will soak up any flavor you add to it, making it great for marinades, but not so much for oil - which will make your eggplant taste greasy if you add too much. A good tactic is to brush eggplant with oil then roast or broil until golden brown. Just make sure to give it plenty of space to caramelize otherwise you’ll end up steaming it instead of browning it.
