Store peppers unwashed - adding moisture before storing ‘em can lead to premature rotting.

Surprisingly, green peppers will hold on a bit longer than red peppers in the fridge - red peppers tend to get rubbery with too much time spent in the cold.

Once chopped, wrap peppers in a cloth or paper towel and store in an airtight container in the fridge.
